In a large bowl, combine together water and sourdough discard, this will make a frothy mix that resembles cereal milk
Add in flour, salt, and butter mix until combined - you want the dough to be completely moisturized with no dry flour residue. Optional: use a stand mixer or Knead the dough to form a smooth dough ball.
Cover and let rest for 30 minutes
Lightly flour your work surface, divide the dough into 10-12 even pieces.
Using a rolling pin, roll out each dough ball to roughly ½ inch thick, the thinner the better
Use parchment paper to separate each tortilla, this will prevent them from sticking to one another
Preheat your griddle or cast iron pan on high heat, once up to temp place down one tortilla (these will cook very fast) let it cook for 1 minute then flip and let it cook for another minute. Set aside and let cool, you can smear some butter on them as they are cooling for extra flavor!
