½ tsp KFRED Cajun Seasoning (you can sub this with your favorite cajun seasoning)
½ tsp Paprika
½ tsp Garlic Powder
½ tsp Onion Powder
1 c of All Purpose Flour
2 c of Italian Panko
2 c of Plain Panko (we used plain bread crumbs as a substitute)
4 Large Full Sour Pickles - use your favorite pickle
Vegetable Oil
Flaky Salt to top
Homemade Ranch Dressing (dipping)
Instructions
Take out 3 medium sized bowls (one for flour mix, wet mix, and breading mix) In one bowl add in flour, cajun seasoning, garlic powder, onion powder, and paprika then mix. In the second bowl add in your eggs, heavy whipping cream, cajun seasoning, garlic powder, onion powder, and paprika whisk mixture until combined. In the third bowl add Italian Panko, Plain Panko, and cajun seasoning then mix.
Slice your pickles at an angle about ½ inch thick then set aside.
Time to bread your pickles: take one slice of pickle and drop it in your flour mix. Coat both sides then drop it in your egg mix, coat both sides. Finally drop it in your panko/breading mix coat both sides, you don’t want too thick of a breading just enough to coat both sides.
In a shallow pan or cast iron add in your vegetable oil, enough to cover your pickles, and place on medium heat. Using a thermometer, you want your oil temp to reach 350 degrees before frying.
Once the oil has reached its desired temp, drop your pickles in. Let them fry on one side until golden brown, about 5 mins, then flip. Once both sides are golden brown, remove them from the oil and set on a paper towel to catch excess oil and cool.
Top with flaky salt, serve with homemade ranch, and ENJOY!!
