Brown your ground beef and chorizo until thoroughly cooked, drain the fat and set aside.
In a large, oven safe, dish add your ground beef, chorizo, rotel, Mexican cheese, cream of mushroom, Velveeta, and cream cheese.
Bake in the oven for 40 minutes, stir every 10 minutes to ensure all ingredients are combined, once cooked take it out of the oven and add your choice of topping. We like to add chives and jalapenos for extra flavor!
