Stuffed Peppers Soup

Ingredients

  • 3 Bell Peppers, chopped
  • 1 onion, chopped
  • 1 elephant garlic clove, chopped
  • 1lb of mild italian sausage
  • 1lb of ground beef
  • 2 tsp of cajun seasoning (adding in 1 tsp at a time)
  • 1 tsp of onion powder
  • 2 tbsp of tomato paste
  • 1 tsp of pizza seasoning
  • 2 cans of diced tomatoes
  • 1 can of tomato sauce
  • 1 box of unsalted chicken stock
  • 1 box of salted chicken stock
  • 1 tbsp of minced garlic (yes we are adding more, we are garlic girls)
  • 1 tsp of parsley flakes (add in ½ tsp at a time)
  • Salt and pepper to taste
  • Olive Oil
  • Handful of Parmesan
  • Handful of Mozzarella
  • Rice - we love to use microwaveable rice bowls from costco but please use whatever your heart desires
  • Optional: Pickled Red Peppers to garnish

Instructions

  1. Put a large pot on your stovetop over medium heat, coat the bottom of your pot with olive oil.
  2. Slice the sausage down the middle and discard the casing, add to the pot. Next, add in the ground beef. Add 1 tsp of cajun seasoning, salt, pepper, and onion powder. Using a spatula beat together the sausage and ground beef this is going to make it so everything is bite sized.
  3. Next add peppers, onions, and elephant garlic let it cook down for about 10 minutes then stir.
  4. Then add tomato paste, a tsp of pizza seasoning, parsley flakes, 1 tsp of cajun seasoning, onion powder, then stir.
  5. Add diced tomatoes, tomato sauce, minced garlic, more parsley flakes, chicken stock then stir.
  6. Cover and let cook on medium heat until it starts to bubble.
  7. Microwave or heat up your rice bowl.
  8. Add as much soup as you’d like on top of your rice, top with parmesan and mozzarella cheese for some extra cheesy goodness
  9. Serve and Enjoy!!
  10. Optional: chop up some pickled red peppers to add as a garnish on top
